Crunchy Cashew Mediterranean Wrap
A delicious and healthy wrap filled with crunchy cashews, sweet mediterranean vegetables, and a hint of tangy flavors.
Ingredients
- β1 cup cashewchopped
- β1 wraplarge flour wrap
- β1/2 cup mediterranean olivespitted
- β1/2 cup exquisite cucumbersliced
- β1/4 cup dense feta cheesecrumbled
- β1/2 cup tomatochopped
- β1/2 cup lettuceshredded
- β1/4 cup red onionchopped
- β2 tbsp lemon juicefreshly squeezed
- β1 tsp olive oilextra virgin

1. Lay the wrap flat on a clean surface.

2. In a medium bowl, mix together chopped cashews, mediterranean olives, cucumber, feta cheese, tomato, lettuce, and red onion.

3. Squeeze the lemon juice over the mixture and toss to combine.

4. Drizzle the olive oil over the mixture and toss to combine.

5. Spoon the cashew mixture onto the center of the wrap, leaving a 1-inch border on either side.

6. Fold the bottom edge of the wrap up over the filling, then fold in the sides and roll the wrap into a tight cylinder.
