Thai Lentil Stew
A hearty, flavorful Thai-inspired lentil stew, perfect for a weeknight dinner. This dish combines the comfort of lentils with the bold flavors of Thai cuisine.
Ingredients

- β2 tablespoons Vegetable oil
- β1 medium OnionChopped
- β2 cloves GarlicMinced
- β1-inch piece GingerGrated
- β2 tablespoons Red curry paste
- β1 cup Coconut milk
- β2 cups Vegetable broth
- β1 tablespoon Fish sauce (optional)Or to taste

Heat the oil in a large saucepan over medium heat.

Add the onion, garlic, and ginger. Cook, stirring occasionally, until the onion is translucent, about 5 minutes.
