Vivace Olive Oil Chicken Fettuccine
A light and flavorful Italian-inspired pasta dish with chicken and vivace olive oil. Perfect for a weeknight dinner.
Ingredients
- β1 pound boneless, skinless chicken breastcut into bite-sized pieces
- β1/4 cup vivace olive oilfor serving
- β1 pound fettuccine pastagluten-free option available
- β3 cloves garlicminced
- β1/4 cup fresh parsleychopped
- βto taste salt
- βto taste black pepper
- β1/2 cup grated Parmesan cheeseoptional

Bring a large pot of salted water to a boil. Cook fettuccine pasta according to package instructions until al dente.

In a large skillet, heat 2 tablespoons of vivace olive oil over medium-high heat.

Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

Add garlic to the skillet and cook for 1 minute.

Add cooked fettuccine pasta to the skillet and toss with chicken and garlic.
