Sour Satay Vegetable Skewers
A refreshing Malaysian-inspired dish featuring grilled vegetables in a tangy satay sauce.

- β1 cup, cut into 1-inch pieces Vegetables (bell peppers, onions, mushrooms, zucchini)
- β1/2 cup Sour Satay Sauce (store-bought or homemade)
- β2 tbsp Malaysian peanut sauce (for garnish)
- β1/4 cup Coconut oil
- β2 tbsp Lime juice
- β1 tsp Honey
- β1 tsp, grated Ginger
- β1/4 tsp Chili flakes
- βto taste Salt
- βfor garnish Fresh cilantro

1. Preheat grill to medium-high heat.

2. Thread vegetables onto skewers, leaving a little space between each piece.

3. In a small bowl, whisk together sour satay sauce, peanut sauce, coconut oil, lime juice, honey, ginger, and chili flakes.

4. Brush the vegetable skewers with the sauce mixture, making sure to coat them evenly.
