Filipino Coconut Chicken Tagine
A twist on the traditional Moroccan tagine, this Filipino-inspired dish combines the rich flavors of coconut milk and spices with the bold flavors of chicken and fresh vegetables.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β1 can coconut milkfull-fat
- β2 tablespoons coconut oilfor cooking
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tablespoon gingergrated
- β1 teaspoon chili flakesoptional
- β2 tablespoons fish sauceoptional
- βchopped fresh cilantrofor garnish

Heat the coconut oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the onion, garlic, and ginger to the skillet and cook until the onion is translucent.

Add the chili flakes and fish sauce (if using) to the skillet and cook for 1 minute.

Add the coconut milk to the skillet and bring the mixture to a simmer.

Return the chicken to the skillet and cook until the chicken is cooked through and the sauce has thickened.
