Malaysian Chicken Satay
A classic Southeast Asian dish featuring marinated chicken grilled to perfection and served with a side of spicy peanut sauce.
Ingredients
- β500g chicken breast
- β250ml coconut milk
- β100g peanut butter
- β50ml soy sauce
- β20g palm sugar
- β3 cloves garlic
- β2 stalks galangal
- β2 stalks lemongrass
- β2 tsp satay spice mix
- β50ml vegetable oil

In a blender or food processor, combine coconut milk, peanut butter, soy sauce, palm sugar, garlic, galangal, lemongrass, and satay spice mix. Blend until smooth.

Place the chicken breast in a large bowl and pour the marinade over it. Mix well to coat the chicken evenly.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat a grill or grill pan to medium-high heat.

Thread the marinated chicken onto skewers, leaving a little space between each piece.

Brush the grill with vegetable oil to prevent sticking.

Grill the chicken for 5-7 minutes per side, or until cooked through.

Serve the chicken satay hot with a side of spicy peanut sauce.

To make the peanut sauce, combine peanut butter, soy sauce, palm sugar, and water in a blender or food processor. Blend until smooth.

Add chili flakes to taste and blend until well combined.
