Portuguese Style Peanut Fritters
A sweet and crispy Portuguese inspired dessert made with peanut brittle and deep-fried to perfection.
Ingredients
- β1 cup peanut brittlecrushed
- β1/2 cup all-purpose flour
- β1/4 cup granulated sugar
- β2 large eggs
- β1 tsp vanilla extract
- βfor frying vegetable oil

In a large mixing bowl, whisk together the flour, sugar, and a pinch of salt.

In a separate bowl, whisk together the eggs and vanilla extract.

Add the crushed peanut brittle to the dry ingredients and mix until well combined.

Pour in the egg mixture and mix until a smooth batter forms.

Heat the vegetable oil in a deep frying pan or a deep fryer to 350Β°F.

Using a spoon, drop the batter into the hot oil, making sure not to overcrowd the pan.
