Russian Apricot Pirozhki Filling
A sweet and tangy filling inspired by russian cuisine, perfect for pirozhki. This recipe combines the flavors of apricot and fermented ingredients, topped with crispy notes.
Ingredients
- β250g apricot jamhomemade or store-bought
- β100g fermented cabbageshredded and drained
- β50g crispy fried onionsstore-bought or homemade
- β50g all-purpose flour
- β20g sugar
- β1 tsp cinnamon
- β1/4 tsp salt
- β1 eggbeaten
- β50ml milk

Preheat the oven to 180Β°C (350Β°F).

In a large bowl, combine apricot jam, fermented cabbage, crispy fried onions, flour, sugar, cinnamon, and salt. Mix well.

Add the beaten egg and milk to the bowl. Mix until a dough forms.

Knead the dough for 5 minutes until it becomes smooth.

Divide the dough into 8-10 equal pieces. Roll each piece into a ball and then flatten it slightly.

Place the flattened dough onto a baking sheet lined with parchment paper.
