Peruvian-Style Aubergine Gratin
A twist on the classic Indian dish with the addition of Peruvian flavors, featuring aubergine as the main ingredient. This recipe combines the richness of gratin with the crunch of fermented elements.

- β1/4 cup Peruvian fermented cornchopped
- β1/4 cup crunchy peanutschopped
- β1 cup gratin cheesegrated
- β1/2 cup chicken brothwarm
- β2 tbsp gheemelted
- β1 tsp garam masalaground
- β1 tsp cumin powderground
- β1 tsp saltto taste

Preheat oven to 375Β°F (190Β°C).

In a large bowl, whisk together ghee, garam masala, cumin powder, and salt. Add sliced aubergine and toss to coat.

Transfer the aubergine to a baking dish and set aside.

In a separate bowl, mix together Peruvian fermented corn, crunchy peanuts, and gratin cheese.

Pour the warm chicken broth over the aubergine in the baking dish.
