Filipino-Style Spring Rolls
A classic Filipino appetizer or snack made with shrimp, vegetables, and a hint of fermented flavor. Simply roll, fry, and serve!
Ingredients
- β1 package Spring roll wrappers (light)usually found in the frozen food section
- β1 pound, peeled and deveined Shrimpcooked and chilled
- β1 cup, grated Carrotshelps retain crunch in the rolls
- β1 cup, shredded Cabbageadds crunch and flavor
- β1/2 cup, finely chopped Onionsweet and savory
- β2 tablespoons Fermented fish saucefilipino-style seasoning
- βto taste Saltadd as needed
- βfor frying Vegetable oiluse a neutral-tasting oil

1. In a large bowl, combine the cooked shrimp, grated carrots, shredded cabbage, and chopped onion.

2. Add the fermented fish sauce and salt to the bowl and mix well to combine.

3. Lay a spring roll wrapper on a clean surface with one corner pointing towards you.

4. Place about 1 tablespoon of the shrimp mixture in the center of the wrapper.

5. Brush the edges of the wrapper with a little water.

6. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

7. Repeat with the remaining wrappers and filling.

8. Heat about 1-2 inches of vegetable oil in a large skillet over medium-high heat.

9. When the oil is hot, add a few of the spring rolls to the skillet (do not overcrowd).

10. Fry the spring rolls until they are golden brown and crispy, turning occasionally.

11. Remove the spring rolls from the oil with a slotted spoon and drain on paper towels.
