Malaysian Fermented Noodle Dish
A spicy and sour Malaysian noodle dish made with fermented ingredients, perfect for a quick and satisfying meal.
Ingredients
- β1 cup Rice noodlespreferably fresh
- β2 tbsp Fermented soybean paste (Tauco)available at Asian grocery stores
- β1 tsp Vegetable oilfor cooking
- β2 cloves Garlicminced
- β1-inch piece Gingergrated
- β1-2 Chili pepperssliced
- β1 cup Bean sproutsfresh
- β1 tsp Soy saucepreferably gluten-free
- β1 tsp Sambal oelekoptional
- β1/4 cup Scallionschopped
Instructions

Cook the rice noodles according to package instructions. Drain and set aside.

Heat the vegetable oil in a wok or large skillet over medium-high heat.

Add the minced garlic and grated ginger and stir-fry until fragrant.

Add the sliced chili peppers and stir-fry for 1 minute.

Add the fermented soybean paste and stir-fry for 1-2 minutes, until fragrant.

Add the cooked noodles, bean sprouts, soy sauce, and sambal oelek (if using). Stir-fry for 2-3 minutes, until the noodles are well coated.

Transfer the noodles to a serving platter. Garnish with chopped scallions and serve immediately.
