Portuguese Bean Casserole
A hearty casserole made with portuguese sausage and beans, perfect for a cold evening. This dish is influenced by traditional portuguese cuisine and is a great alternative for a comforting meal.
Ingredients
- β1 lb Portuguese Sausage
- β1 can (15 oz) Canned Kidney Beans
- β1 medium Onion
- β3 cloves Garlic
- β2 tbsp Tomato Paste
- β1/4 cup, crumbled Fermented Cheese (optional)
- β2 tbsp Olive Oil
- βto taste Salt
- βto taste Black Pepper
- βchopped (optional) Fresh Parsley

Preheat oven to 375Β°F (190Β°C).

Cook the Portuguese sausage in a large skillet over medium-high heat until browned, breaking into small pieces as it cooks.

Add the onion and garlic to the skillet and cook until the onion is translucent.

Stir in the tomato paste and cook for 1-2 minutes.

Add the canned kidney beans, salt, and black pepper to the skillet and stir to combine.

Transfer the mixture to a 9x13 inch baking dish.

If using, sprinkle the fermented cheese on top of the bean mixture.

Drizzle the olive oil over the top and sprinkle with chopped parsley (if using).
