Slovakian Roast Pork
A hearty Slovakian-inspired dish featuring slow-cooked roast pork. This recipe is best served with a side of corn and roasted vegetables.
Ingredients
- ●1 1 (2-3 pound) pork shoulderfat side up
- ●1 tablespoon 1 tablespoon caraway seedsoptional
- ●2 cloves 2 cloves garlic, mincedminced
- ●1 cup 1 cup cornfresh or frozen
- ●1 tablespoon 1 tablespoon brown sugaroptional

Preheat oven to 325°F (160°C).

Season the pork shoulder with salt, pepper, and caraway seeds.

In a large Dutch oven, heat a tablespoon of oil over medium-high heat.

Sear the pork shoulder until browned on all sides, about 2-3 minutes per side.

Transfer the pork to a plate and set aside.

Add the minced garlic to the pot and cook for 1 minute, until fragrant.

Add the corn to the pot and cook for 2-3 minutes, until slightly tender.

Return the pork shoulder to the pot, fat side up.

Cover the pot with a lid and transfer to the preheated oven.

Bake for 2 1/2 to 3 hours, or until the pork is tender and falls apart easily.
