Brazilian Pasta Festa
A colorful and festive Brazilian-inspired pasta dish that brings a taste of carnival to your table.
Ingredients
- β8 oz Farfalle pastabow-tie pasta
- β1 cup Brazilian-style festive peppersany color, sliced
- β2 Chewy sweet plantainsripe, sliced
- β1/2 cup Brazilian-style salsahomemade or store-bought
- β2 tbsp Pestohomemade or store-bought
- β1/2 cup Cheddar cheeseshredded
- β2 tbsp Olive oilfor cooking
Instructions

Cook the farfalle pasta according to package instructions; drain and set aside.

In a large skillet, heat the olive oil over medium-high heat.

Add the sliced peppers and cook until tender, about 5 minutes.

Add the sliced plantains and cook for an additional 2-3 minutes, until slightly caramelized.

Stir in the pesto and cook for 1-2 minutes, until heated through.

Add the cooked pasta to the skillet and toss to combine with the pepper and plantain mixture.

Season with salt and pepper to taste.
