Tangy Tofu Stir Fry
A quick and easy Asian-inspired dish made with marinated tofu, crunchy vegetables, and a sweet and sour sauce.
Ingredients
- β250g Tofupressed and drained
- β2 tbsp Vinegarapple cider
- β1 tbsp Soy Saucelow sodium
- β2 tsp Cornstarchfor thickening
- β1 Festive Bell Peppersany color
- β1 Onionthinly sliced
- β1 tsp Gingergrated
- β200g Stir Fry Noodlesrice or wheat

1. In a shallow dish, whisk together vinegar, soy sauce, and cornstarch to make a marinade.

2. Add the tofu to the marinade and refrigerate for at least 15 minutes.

3. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.

4. Remove the tofu from the marinade, allowing any excess to drip off.

5. Add the tofu to the wok and cook for 3-4 minutes on each side, until golden brown.

6. Add the sliced onion and minced ginger to the wok and cook for 2-3 minutes, until the onion is translucent.

7. Add the bell peppers to the wok and cook for 2-3 minutes, until tender.

8. Add the cooked noodles to the wok and stir to combine with the vegetables and tofu.

9. Serve immediately, garnished with sesame seeds and chopped green onions if desired.
