Canadian Curry Bowl
A flavorful and aromatic dish featuring Canadian wild salmon, served in a bowl with a side of spicy yellow curry sauce.
Ingredients
- β4 oz Canadian wild salmon fillet Fresh and sustainable
- β2 tbsp Yellow curry pasteHomemade or store-bought
- β2 tbsp Coconut oilFor frying
- β1 medium OnionChopped
- β2 cloves GarlicMinced
- β1 tsp Fierce chili flakesFor added heat
- β2 tbsp Fish sauceOptional, for added umami

Preheat oven to 400Β°F (200Β°C).

Season the salmon fillet with salt and pepper.

Heat the coconut oil in an oven-safe skillet over medium-high heat.

Sear the salmon for 2-3 minutes per side, then transfer to the oven.

Roast in the oven for 8-10 minutes, or until cooked through.

Meanwhile, heat the curry paste in a small saucepan over medium heat.

Add the onion and garlic, and cook until softened.

Stir in the fierce chili flakes and fish sauce (if using).

Simmer the curry sauce for 2-3 minutes, or until heated through.

To serve, place the salmon on a bed of yellow rice or noodles, and spoon the curry sauce over the top.
