Vegetable Casserole
A delicious Italian-inspired casserole filled with vegetables and perfect for a satisfying dinner.
Ingredients
- β2 tablespoons Olive oil
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 cup Mushroomssliced
- β1 medium Zucchinisliced
- β1 medium Eggplantsliced
- β1 cup Tomato sauce
- β1 cup Vegetable broth
- β1/2 cup Grated Parmesan cheese

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the sliced mushrooms, zucchini, and eggplant. Cook until the vegetables are tender, about 10 minutes.

Stir in the tomato sauce and vegetable broth. Bring the mixture to a simmer.

In a separate bowl, combine the grated Parmesan cheese and a pinch of salt.

In a 9x13-inch baking dish, create a layer of the vegetable mixture.

Top the vegetable mixture with a layer of the Parmesan cheese mixture.

Repeat the layers two more times, ending with a layer of cheese on top.

Cover the dish with aluminum foil and bake for 30 minutes.
