Peruvian Shrimp Stir Fry
A flavorful and spicy stir fry dish from Peru, featuring succulent shrimp and a variety of local ingredients.
Ingredients

- β1 tsp Smoky Paprikaground
- β2 tbsp Peruvian Aji Amarillo Saucestore-bought or homemade
- β1 pound Shrimppeeled and deveined
- β1 cup Chupe de Mariscos Brothstore-bought or homemade
- β1 tsp Camarones Seasoningstore-bought or homemade
- β1/4 tsp De Arbol Chili Flakesoptional, for extra heat
- β1 cup Ricecooked
- β1/4 cup Fresh Cilantrochopped

Heat 1 tablespoon of oil in a large skillet over medium-high heat.

Add the sliced red peppers and cook for 3-4 minutes, or until tender.

Add the ground paprika and cook for 1 minute, stirring constantly.

Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through.

Add the aji amarillo sauce, chupe de mariscos broth, and camaronese seasoning. Stir to combine.

Bring the mixture to a simmer and cook for 2-3 minutes, or until the sauce has thickened.

Add the cooked rice to the skillet and stir to combine.
