Croatian Plum Tomato Stir Fry
A delicious and easy to make stir fry dish combining the flavors of Croatia and the sweetness of plums.
Ingredients
- β1 sheet flaky pastryfor serving
- β2 croatian plumany variety
- β1 cup tomatoescherry or grape tomatoes
- β2 tbsp vegetable oilfor frying
- β1/2 cup onionthinly sliced
- β2 cloves garlicminced
- βto taste salt
- βto taste pepper
Instructions

Preheat the oven to 400Β°F (200Β°C).

Cut the plums in half and place them on a baking sheet.

Drizzle the plums with a little bit of oil and season with salt and pepper.

Bake the plums in the oven for 15-20 minutes, or until they are tender.

In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.

Add the sliced onion and cook until it is translucent, about 3-4 minutes.

Add the minced garlic and cook for another minute.

Add the cherry tomatoes and cook until they start to release their juices, about 2-3 minutes.

Add the cooked plums to the skillet and stir to combine.

Season with salt and pepper to taste.

Serve the plum tomato mixture over flaky pastry, garnished with fresh herbs if desired.
