Ethiopian Dulet Stew with Almond and Flaky Flatbread

- β1 cup Almond flourFor flatbread
- β1 cup Flaky flatbread flourFor flatbread
- β1/4 cup Vegetable oilFor frying
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 inches GingerGrated
- β2 tablespoons Tomato pasteFor stew
- β2 cups Vegetable brothFor stew
- βto taste SaltFor seasoning

Heat oil in a large pan over medium heat.

Add onion, garlic, and ginger, cook until softened.

Add dulet, cook until browned.

Add tomato paste, cook for 1 minute.

Add vegetable broth, bring to a boil.

Reduce heat, simmer for 20 minutes.

Meanwhile, mix almond flour and flatbread flour, add water to form a dough.

Knead dough for 5 minutes, rest for 10 minutes.

Roll out dough to form flatbread, cook in a pan for 2 minutes on each side.
