Jerusalem Artichoke Tacos
A twist on traditional tacos, featuring roasted Jerusalem artichokes and a blend of Mexican flavors.
Ingredients
- β4 large Jerusalem Artichokes
- β8-10 Flaky Tortillas
- β1/4 cup chopped Fresh Cilantro
- β2 tablespoons Lime Juice
- β1 medium Grilled Onion
- β1 cup shredded Mexican Cheese
- β2 tablespoons Avocado Oil

- βto taste Pepper

2. Scrub the Jerusalem artichokes clean and chop them into 1-inch pieces.

3. Place the artichoke pieces on a baking sheet lined with parchment paper.

4. Drizzle with 1 tablespoon of avocado oil and sprinkle with salt and pepper.

5. Roast the artichokes in the preheated oven for 20-25 minutes, or until tender.

6. While the artichokes are roasting, grill the onion over medium heat until caramelized.

7. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

8. Assemble the tacos by placing a few pieces of roasted artichoke onto a warmed tortilla, topping with grilled onion, a sprinkle of cilantro, and a squeeze of lime juice.
