Beef and Vegetable Stir Fry
Quick and easy beef stir fry with a variety of vegetables and a hint of greek flavor.
Ingredients
- β1 pound Beef (sirloin or ribeye)Cut into thin strips
- β1 package Flaky Pastry Dough (for Beef and Onion Pinwheels)
- β1/4 cup Greek Yogurt
- β2 tablespoons Stir-fry Sauce
- β2 Bell Peppers (any color)Sliced
- β1 large OnionsSliced
- β3 cloves GarlicMinced
- β1/4 cup Fry Oil

Preheat oven to 400Β°F (200Β°C).

Season beef with salt and pepper. Cook in a skillet over medium-high heat until browned, about 3-4 minutes. Set aside.

Roll out the flaky pastry dough to a thickness of about 1/8 inch. Cut into 4 equal rectangles.

In a bowl, mix together the Greek yogurt and stir-fry sauce. Spread a tablespoon of this mixture on each pastry rectangle, leaving a 1/2 inch border around the edges.

Arrange a few slices of beef on each pastry rectangle, followed by some sliced onions and bell peppers.

Fold the pastry in half to form a pinwheel shape and press the edges to seal.

Brush the tops of the pinwheels with a little bit of fry oil.

Bake the pinwheels in the preheated oven for 15-20 minutes, or until they're golden brown.
