Eggplant Medley
A simple yet flavorful dish combining the richness of eggplant with Mediterranean flavors. Serve as a side or main course.
Ingredients

- βto taste Flaky Salt
- β3 tablespoons Olive Oil
- β2 cloves GarlicMinced
- β1/4 cup BasilChopped
- β1/4 cup ThymeChopped
- β2 tablespoons Lemon Juice
- βto taste Black Pepper

Preheat oven to 400Β°F (200Β°C).

Toss eggplant cubes with flaky salt to draw out moisture. Let sit for 10 minutes.

Rinse eggplant cubes under cold water, then pat dry with paper towels.

Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 1 minute.

Add eggplant cubes and cook until browned, about 5-7 minutes.
