Moroccan Blue Cheese Flaky Pastry
A savory pastry filled with a tangy blue cheese mixture, inspired by the flavors of Morocco.
Ingredients
- ●1 sheet flaky pastry doughhomemade or store-bought
- ●100g blue cheesecrumbly, tangy
- ●1 tsp moroccan spice mixras el hanout or similar blend
- ●pinch saltto taste
- ●1 sprig fresh thymechopped, for garnish
Instructions

Preheat oven to 200°C (400°F).

Roll out the flaky pastry dough to a thickness of 3mm.

In a small bowl, mix together the blue cheese, moroccan spice mix, and salt.

Spread the blue cheese mixture evenly over one half of the pastry dough, leaving a 1cm border around the edges.

Fold the other half of the pastry dough over the filling, pressing the edges to seal.

Use a sharp knife to cut a few slits in the top of the pastry to allow steam to escape.

Brush the top of the pastry with a little water and sprinkle with chopped thyme.

Bake the pastry for 20-25 minutes, or until golden brown.

Remove from the oven and let cool for a few minutes before serving.
