Saudian Lamb Tagine with Chives
A traditional Middle Eastern stew originating from Saudi Arabia, flavored with aromatic spices and herbs.
Ingredients
- β1 kg Lamb shouldercut into 2-inch pieces
- β2 tablespoons Flambeoptional
- β1 cup Arabian coffeeused for marinade
- β1 bunch Chiveschopped
- β2 inches Gingersliced
- β3 cloves Garlicminced
- β1 teaspoon Cuminground
- β1 teaspoon Cinnamonground
- β1/2 teaspoon Cayenne pepperground
- β1 teaspoon Saltground
- β1/2 teaspoon Black pepperground

Heat oil in a large Dutch oven over medium-high heat.

Brown the lamb on all sides, then set aside.

Add cumin, cinnamon, cayenne pepper, salt, and black pepper to the pot; cook for 1 minute.

Add the sliced ginger and cook for 1 minute.

Add the browned lamb, coffee, and 2 cups of water to the pot.

Bring the mixture to a boil, then cover and transfer to the oven.

Bake for 2.5 hours or until the lamb is tender.

Stir in the chopped chives and flambe (if using).

Serve the tagine hot, garnished with additional chives if desired.
