French Chicken Rillettes
A French-inspired dish featuring chicken rillettes made with flavorful chicken and served with crispy, snappy accompaniments.
Ingredients
- β1 1/2 pounds boneless, skinless chicken thighs
- β2 tablespoons unsalted butter
- β1 medium, thinly sliced onion
- β3 cloves, minced garlic
- β2 tablespoons all-purpose flour
- β1 cup white wine
- β1 cup chicken broth
- β2 sprigs fresh thyme
- β1 loaf, for serving crusty bread

Preheat the oven to 275Β°F (135Β°C).

Season the chicken thighs with salt and pepper.

In a large Dutch oven, melt 1 tablespoon of butter over medium heat. Add the sliced onion and cook until caramelized, about 20-25 minutes.

Add the garlic and cook for 1 minute.

Add the chicken thighs and cook until browned on all sides, about 5-7 minutes.

Add the flour and cook for 1 minute.

Add the white wine and chicken broth. Stir to combine, scraping up any browned bits.
