British Oat Curry
A hearty and flavorful British-inspired curry made with oats and a blend of spices. Perfect for a cold winter's day.
Ingredients
- β1 cup Rolled Oats
- β1 medium Onion
- β1 cup Floral Jasmine Rice
- β2 tsp Curry Powder
- β1 tsp Ground Cumin
- β2 tbsp Coconut Oil
- β2 cups Water
- βto taste Salt
- βchopped, for garnish Fresh Cilantro
Instructions

Heat the coconut oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the curry powder and cumin and cook for 1 minute, stirring constantly.

Add the oats and cook for 2-3 minutes, stirring frequently.

Add the water and bring to a boil.

Reduce the heat to low and simmer for 20-25 minutes, or until the oats have absorbed most of the liquid and the mixture has thickened.

Season with salt to taste.

Serve the curry over jasmine rice, garnished with chopped cilantro.
