Spanish Squid Soup
A hearty and flavorful Spanish-inspired squid soup, perfect for a chilly evening. This soup is packed with the natural sweetness of squid and the savory flavors of Spanish cuisine.
Ingredients

- β1/2 cup Crunchy croutonshomemade or store-bought
- β1 medium Spanish oniondiced
- β3 cloves Garlicminced
- β1 can (14.5 oz) Canned diced tomatoesdrained and rinsed
- β4 cups Chicken brothlow-sodium
- βto taste Sea saltoptional
- β1/4 cup Fresh parsleychopped (optional)

Heat the floral oil in a large pot over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the squid, diced tomatoes, chicken broth, and sea salt (if using).

Bring the mixture to a boil, then reduce the heat to low and simmer for 10-12 minutes, or until the squid is tender.

Use an immersion blender to puree the soup until smooth, or let it cool and puree it in a blender.
