Filipino-Style Pancit with Cucumber Relish
A refreshing and flavorful twist on the classic Filipino noodle dish, featuring a crunchy cucumber relish.
Ingredients
- β8 oz fresh noodlespreferably rice noodles
- β2 medium cucumberpeeled and thinly sliced
- β2 tbsp floral wateroptional, for added flavor
- β1 cup pork-free pancit sauceuse store-bought or homemade
- β1/4 cup fresh cilantrochopped
- β2 tbsp persian lime juicefreshly squeezed
- β1 cup canton-style vegetablessuch as cabbage, carrots, and bean sprouts
- βto taste saltpreferably sea salt
- βto taste pepperpreferably freshly ground
Instructions

Cook the fresh noodles according to package instructions. Drain and set aside.

In a large bowl, combine the sliced cucumber, floral water (if using), and a pinch of salt. Let it sit for 10-15 minutes to allow the cucumber to release its excess water.

Add the cooked noodles to the bowl with the cucumber mixture and toss to combine.

In a separate pan, heat the pancit sauce over medium heat. Add the canton-style vegetables and cook until they are tender-crisp.

Add the cooked noodles and vegetable mixture to the pan with the pancit sauce. Toss everything together to combine.
