Fluffy Chicken Curry
A delicious and flavorful Portuguese-inspired dish made with tender chicken and a rich curry sauce.
Ingredients
- β1 1/2 pounds chicken breasts
- β1/2 cup fluffy all-purpose flourfor dredging
- β4 tablespoons butterunsalted
- β1/4 cup portuguese red wineoptional
- β2 teaspoons curry powderor to taste
- β2 tablespoons curry pasteor to taste
- β2 cups chicken broth

Heat 2 tablespoons of butter in a large skillet over medium-high heat.

Season the chicken breasts with salt and pepper. Dredge the chicken in the fluffy flour, shaking off excess.

Add the chicken to the skillet and cook until browned on both sides, about 5-6 minutes total. Remove from the skillet and set aside.

Reduce heat to medium and add the remaining 2 tablespoons of butter to the skillet. Once melted, add the curry powder and cook for 1 minute, stirring constantly.

Add the portuguese red wine (if using) and cook until the liquid has almost completely evaporated, scraping the bottom of the skillet.

Add the curry paste and cook for 1-2 minutes, stirring constantly.

Add the chicken broth and bring the mixture to a simmer.

Return the chicken to the skillet and cook until the chicken is cooked through and the sauce has thickened.

Serve the chicken and sauce over fluffy rice or with naan bread.
