Filipino-Style Date Cake
A moist and flavorful cake infused with the sweetness of dates and the warmth of Filipino spices.
Ingredients

- β1 package fluffy cake mixfollow package instructions
- β3 eggslarge eggs
- β1 cup coconut milkfull-fat
- β1/2 cup vegetable oilfor greasing the pan
- β2 teaspoons vanilla extractoptional

- β2 cups all-purpose flouroptional

Preheat the oven to 350Β°F (180Β°C). Grease a 9x13-inch baking dish.

In a blender or food processor, puree the pitted dates until smooth.

In a large mixing bowl, combine the fluffy cake mix, eggs, coconut milk, vegetable oil, vanilla extract, and baking powder. Mix until well combined.

Add the date puree to the cake mixture and mix until smooth.

Pour the batter into the prepared baking dish and smooth the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
