Chicken Casserole
A classic comfort food dish featuring chicken, fluffy rice, and a creamy sauce, all baked together in a casserole.
Ingredients
- ●1 1/2 pounds 1 1/2 pounds boneless, skinless chicken breast or thighs
- ●1 cup 1 cup fluffy rice
- ●2 cups 2 cups mixed vegetables (such as peas, carrots, corn)
- ●1 can (10 3/4 ounces) 1 can (10 3/4 ounces) cream of chicken soup
- ●1/2 cup 1/2 cup shredded french cheese
- ●1/4 cup 1/4 cup milk
- ●2 tablespoons 2 tablespoons butter

Preheat the oven to 350°F (180°C).

Cook the fluffy rice according to package instructions.

In a large skillet, sauté the mixed vegetables and chicken until the chicken is cooked through.

Stir in the cream of chicken soup and shredded french cheese until the cheese is melted.

Add the cooked rice to the skillet and stir until combined.

Transfer the mixture to a 9x13-inch casserole dish.

Dot the top of the casserole with butter.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the top is lightly browned.
