Thai Pilaf Spring Rolls
A twist on the classic spring roll, this recipe combines the flavors of Thai cuisine with the comfort of a warm pilaf.
Ingredients
- ●2 cups fluffy rice pilafcooled
- ●1 package filo doughthawed
- ●1/4 cup greek yogurtfor wrapping
- ●1/4 cup chopped cilantrofor garnish
Instructions

Combine pilaf, chopped cilantro, and a squeeze of lime juice in a bowl.

Lay a sheet of filo dough flat and brush with a little water.

Place a tablespoon of the pilaf mixture in the center of the filo dough.

Fold the bottom half of the filo up over the filling, then fold in the sides and roll up the spring roll.

Repeat with remaining dough and filling.

Heat a large skillet or wok over medium-high heat.

When hot, add a tablespoon of oil and a few spring rolls seam-side down.

Cook for 2-3 minutes on each side, until golden brown.

Serve warm with additional cilantro and yogurt for dipping.

Note: You can also bake the spring rolls in a preheated oven at 375°F (190°C) for 10-12 minutes, or until crispy and golden.
