Portuguese Frittata with Fresh Tomato
A delicious and easy-to-make Portuguese-inspired frittata filled with fresh tomatoes and a hint of portuguese seasonings.
Ingredients

- ●1 pint grape tomatoes
- ●1 cup grated portuguese cheese
- ●chopped fresh parsley
- ●1 small, cubed fluffy breadfor croutons
Instructions

Preheat oven to 375°F (190°C).

Whisk eggs in a large bowl and season with salt and pepper.

Heat a non-stick skillet over medium heat.

Add cubed bread and cook until lightly toasted, about 3-4 minutes.

Add grape tomatoes to skillet and cook until they start to release their juices.

Pour whisked eggs over tomatoes and cook until edges start to set.

Transfer skillet to preheated oven and bake for 15-20 minutes, or until eggs are set.

Remove from oven and sprinkle with portuguese cheese and chopped parsley.

Return to oven and bake for an additional 2-3 minutes, or until cheese is melted and bubbly.
