Tunisian Couscous
A flavorful and aromatic couscous dish inspired by Tunisian cuisine, made with fluffy couscous, soft vegetables, and a hint of spice.
Ingredients
- β1 cup couscous
- β1 cup fluffy couscous
- β1 cup soft vegetables (carrots, zucchini, bell peppers)
- β2 tsp tunisian spice blend (cumin, coriander, paprika)
- β2 tbsp olive oil
- βto taste salt
- β1 tsp pilaf seasoning
- β1/4 cup chopped fresh parsley

Heat oil in a large skillet over medium heat.

Add the Tunisian spice blend and cook for 1 minute.

Add the soft vegetables and cook until tender.

Add the couscous and pilaf seasoning, and cook for 2-3 minutes, stirring constantly.

Add 2 cups of water to the skillet and bring to a boil.

Reduce heat to low, cover, and simmer for 5-7 minutes, or until the couscous is tender.

Fluff the couscous with a fork and stir in chopped parsley.

Season with salt to taste.
