Carnitas Tacos
A flavorful Mexican dish featuring slow-cooked pork, crispy tortillas, and fresh toppings.
Ingredients
- β1.5 pounds pork shoulderboneless
- β1/4 cup lard or vegetable oilfor frying
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 teaspoon cuminground
- β1 teaspoon chili powderground
- β1/2 teaspoon saltto taste
- β8-10 tortillascorn or flour
- β1 cup salsastore-bought or homemade
- β1 cup shredded cheeseoptional

Heat the lard or oil in a large Dutch oven over medium-high heat.

Sear the pork shoulder until browned on all sides, about 5 minutes.

Add the onion and garlic to the pot and cook until the onion is translucent.

Add the cumin, chili powder, and salt to the pot and stir to combine.

Add enough water to the pot to cover the pork and bring to a boil.

Reduce the heat to low and simmer, covered, for 2-1/2 hours, or until the pork is tender.

Shred the pork with two forks and return it to the pot.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by spooning the pork onto a tortilla and topping with salsa, cheese, and any other desired toppings.
