Creamy Indian Chestnut Curry
A rich and flavorful curry made with roasted chestnuts, fragrant spices, and a creamy sauce. Perfect for a comforting dinner.
Ingredients
- β1 cup, peeled and chopped chestnuts
- β2 tbsp fragrant oilsuch as coconut or canola oil
- β1 medium, diced onion
- β2 inches, grated ginger
- β2 tsp curry powder
- β1 tsp cumin powder
- β1 cup coconut milk
- β2 cups water

Heat the oil in a large pan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the ginger and cook for another minute.

Add the curry powder and cumin powder, and cook for 1-2 minutes, until fragrant.

Add the chestnuts and cook for 2-3 minutes, until they start to brown.

Add the coconut milk and water, and bring to a simmer.

Reduce the heat to low and cook, covered, for 20-25 minutes, or until the chestnuts are tender.
