Portuguese Lamb Stew
A hearty, comforting stew made with tender lamb and aromatic spices, perfect for a cold winter's night.
Ingredients
- β1.5 kg lamb shoulder
- β2 medium onion
- β3 medium carrot
- β2 stalks celery
- β3 cloves garlic
- β2 tsp cumin
- β1 tsp paprikasmoked
- β1 tsp salt
- β1 tsp black pepper
- β250 ml portuguese red wine

Heat the oil in a large Dutch oven over medium-high heat.

Brown the lamb on all sides, then set aside.

Add the onion, carrot, and celery to the pot and cook until the vegetables are tender.

Add the garlic, cumin, paprika, salt, and black pepper to the pot and cook for 1 minute.

Add the browned lamb back to the pot, along with the wine.

Bring the stew to a boil, then cover the pot and transfer it to the oven.

Braise the stew for 2.5 hours, or until the lamb is tender.

Serve the stew hot, garnished with fresh parsley.
