Thai Chicken Noodle Stir-Fry
A quick and flavorful Thai-inspired stir-fry made with protein-rich chicken, fragrant noodles, and crunchy fried shallots.
Ingredients

- β1 cup noodlesThai-style rice noodles
- β2 tablespoons fragrant vegetable oil
- β2 tablespoons Thai red curry paste
- β1 tablespoon fish sauce
- β1 tablespoon sugar
- β1/4 cup chopped shallotsfried
- β1/4 cup chopped cilantro

Heat oil in a wok or large skillet over medium-high heat.

Add chicken and cook until browned, about 5 minutes.

Remove chicken from the wok and set aside.
