Sardine Curry

- ●1 can (120g) Sardines in oildrained and flaked
- ●1 medium Onionchopped
- ●2 cloves Garlicminced
- ●2 tsp Fragrant curry powderor to taste
- ●2 tbsp Tomato pastediluted with 2 tbsp water
- ●6-8 leaves Curry leavesor substitute with fresh cilantro
- ●to taste Salt
- ●chopped (for garnish) Fresh cilantro
- ●2 tbsp Coconut oil or vegetable oilfor cooking

Instructions

Heat oil in a large pan over medium heat.

Add onion and garlic; sauté until onion is translucent.

Add curry powder and cook for 1-2 minutes, stirring constantly.
