Chicken Stew
A hearty and flavorful Indian-inspired chicken stew made with tender chunks of chicken and a rich, aromatic spice blend.
Ingredients
- β1 1/2 pounds Boneless, skinless chicken breast or thighscut into 1 1/2-inch pieces
- β1 large Fresh onionchopped
- β2 inches Fresh gingergrated
- β1/4 cup Fresh cilantrochopped
- β2 cubes Bouillon cubes (beef or chicken)
- β1 cup Stew (beef or chicken)
- βto taste Salt
- βto taste Black pepper

Heat oil in a large Dutch oven over medium-high heat.

Add the onion and cook, stirring occasionally, until lightly browned, about 8 minutes.

Add the ginger and cook, stirring constantly, for 1 minute.

Add the chicken and cook, stirring occasionally, until browned on all sides and cooked through, about 6-8 minutes.

Add the bouillon cubes, stew, salt, and black pepper. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, until the flavors have melded together and the chicken is tender, about 20-25 minutes.
