Portuguese Pasta Bake
A vegan pasta bake inspired by traditional Portuguese flavors. This hearty dish combines chewy pasta with a flavorful tomato sauce, topped with melted vegan cheese.
Ingredients
- β8 oz rigatoni pasta
- β2 cups fresh tomatoeschopped
- β1 can portuguese black beansdrained and rinsed
- β1 cup vegan mozzarella cheeseshredded
- β2 tbsp olive oil
- β1 onionchopped
- β2 cloves garlicminced
- β1/4 cup fresh parsleychopped
- βto taste salt
- βto taste black pepper

Preheat oven to 375Β°F (190Β°C).

Cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Stir in the chopped fresh tomatoes, black beans, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally.

In a large mixing bowl, combine the cooked pasta, tomato sauce mixture, and chopped parsley. Mix well to combine.

Transfer the pasta mixture to a baking dish and top with shredded vegan mozzarella cheese.
