Pan-Seared Dabo with Spinach and Crispy Ethiopian Spices
A unique fusion of Japanese flavors with Ethiopian spices, featuring crispy dabo and fresh spinach.
Ingredients

- β2 cups fresh spinachchopped
- β2 tablespoons crispy ethiopian spicesstore-bought or homemade
- β1/2 cup vegetable oilfor pan-frying
- β2 tablespoons soy saucefor marinade
- β1 tablespoon rice vinegarfor marinade
- β1 tablespoon honeyfor glaze
- β1 teaspoon sesame oilfor finishing

1. In a shallow dish, whisk together soy sauce, rice vinegar, and honey to make the marinade.

2. Add the dabo to the marinade and let it sit for 15 minutes.

3. Heat the vegetable oil in a large skillet over medium-high heat.

4. Remove the dabo from the marinade and sear both sides until golden brown, about 2-3 minutes per side.

5. Transfer the dabo to a plate and set aside.

6. In the same skillet, add the crispy Ethiopian spices and cook for 1 minute, stirring constantly.

7. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
