- β1 large Carrots
- β2 large Potatoes
- β1 medium Zucchini
- β1 large Red bell pepper
- β2 tsp Ethiopian berbere spice
- β2 tbsp Olive oil
- β1/4 cup Fresh cilantro

Heat oil in a large pan over medium heat.

Add onion and garlic, cook until softened, about 5 minutes.

Add carrots, potatoes, zucchini, and red bell pepper, cook for 10 minutes.
