Australian Macaroni Bolognese
A classic Australian pasta dish featuring ground beef, tomatoes, and herbs. Serve with a side of garlic bread for a comforting meal.

- β2 tablespoons Tomato Paste
- β1 can (400g) TomatoesCrushed

- β2 tablespoons Olive Oil
- β1/4 cup Fresh BasilChopped

Cook the macaroni in boiling, salted water until al dente. Reserve 1 cup of pasta water before draining.

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chopped onion, carrots, and celery and cook until the vegetables are tender.

Add the ground beef to the pot, breaking it up with a spoon as it cooks. Cook until the beef is browned, then add the tomato paste and cook for 1 minute.

Add the crushed tomatoes, beef stock, and reserved pasta water to the pot. Stir to combine, then bring the sauce to a simmer.

Reduce the heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally.

Add the cooked macaroni to the sauce and toss to combine. Season with salt and pepper to taste.
