Colcannon with Irish Sausages
A hearty and flavorful colcannon dish made with Irish sausages, mashed potatoes, and fresh sprouts. Perfect for a cold winter's night.
Ingredients
- ●4 Irish sausageslook for nitrate-free options
- ●2 lbs mashed potatoespreferably Russet or Idaho
- ●1 bunch sprouts (fresh)about 1 pound
- ●1 cup mung bean stewhomemade or store-bought
- ●1 loaf festival bread (optional)for serving

1. Preheat the oven to 400°F (200°C).

2. Cook the Irish sausages in a pan over medium-high heat until browned on all sides. Remove from heat and set aside.

3. Boil the mashed potatoes until tender. Drain and mash with butter and milk.

4. Heat the mung bean stew in a separate pan over medium heat.

5. Sauté the fresh sprouts in butter until tender and slightly browned.

6. To assemble the colcannon, place a layer of mashed potatoes in the bottom of a serving dish.

7. Add a layer of cooked sausages on top of the potatoes.

8. Spoon the mung bean stew over the sausages.
