Slovakian Mussel Braising Stew
A hearty Slovakian-inspired stew featuring fresh mussels in a rich, flavorful braise.
Ingredients
- ●1 pound mussels
- ●1 medium onion
- ●1 teaspoon caraway seeds
- ●2 bay leaves
- ●1/2 cup white wine
- ●2 cups mushroom broth
- ●1/4 cup sour cream
- ●1/4 cup fresh parsley
- ●to taste salt
- ●to taste black pepper
- ●1 slice fresh bread
Instructions

Rinse the mussels and remove any broken shells.

In a large pot, heat a little bit of oil over medium heat. Add the onion and sauté until softened.

Add the caraway seeds and bay leaves to the pot and sauté for another minute.

Add the white wine to the pot and bring to a simmer.

Add the mussels to the pot and cover with a lid.

Braise the mussels for 5-7 minutes, or until they open.

Remove the mussels from the pot and set aside.

Add the mushroom broth to the pot and bring to a simmer.

Return the mussels to the pot and simmer for another 2-3 minutes.

Stir in the sour cream and parsley.
