Roast Chicken with Peruvian Spice and Fresh Roast Potatoes
A flavorful and aromatic roast chicken dish infused with Peruvian spices, served with crispy roast potatoes.

- ●2 tbsp olive oil
- ●3 cloves garlic
- ●1/4 cup fresh cilantro
- ●2 large roast potatoes

2. Rinse the chicken and pat it dry with paper towels.

3. Mix the Peruvian spice blend with olive oil, garlic, and a pinch of salt and pepper. Rub the spice mixture all over the chicken.

4. Place the chicken in a roasting pan and put it in the oven.

5. Roast the chicken for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C).

6. While the chicken is cooking, peel the roast potatoes and cut them into large chunks.
