Uruguayan Cheese Stew
A hearty stew originating from Uruguay, made with tender beef and melted cheese.
Ingredients
- β1 pound Fresh beef strips (1 pound)
- β1/2 pound Uruguayan chorizo (1/2 pound)
- β1 medium Onion (1 medium)
- β3 cloves Garlic (3 cloves)
- β1 cup Red wine (1 cup)
- β2 cups Beef broth (2 cups)
- β1/4 cup Fresh parsley (1/4 cup)
- β1 cup Chopped cheese (1 cup)
- β Salt and pepperto taste

Heat oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside. Add the chorizo and cook until browned, about 5 minutes.

Add the onion and garlic to the pot and cook until softened, about 5 minutes.

Add the red wine to the pot and bring to a boil. Scrape up any browned bits from the bottom of the pot.

Add the beef broth to the pot and bring to a boil. Return the beef to the pot and simmer for 1 1/2 hours.

Stir in the chopped cheese and parsley. Simmer for an additional 10-15 minutes, or until the cheese is melted and the stew is hot.

Season the stew with salt and pepper to taste.

Serve the stew hot, garnished with additional parsley if desired.
