Kenyan Fried Chicken Skewers
Spicy and flavorful chicken skewers marinated in a mixture of African spices and then fried to perfection.
Ingredients
- β1 1/2 pounds chicken breastcut into 1-inch cubes
- β2 tablespoons Kenyan chili powderor substitute with African chili powder
- β1/4 cup hazelnut oilfor frying
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons lemon juicefreshly squeezed
- β1 teaspoon saltto taste
- β1/2 teaspoon pepperto taste

Preheat the oil in a deep frying pan to 350Β°F (175Β°C).

In a large bowl, whisk together the chili powder, hazelnut oil, onion, garlic, lemon juice, salt, and pepper.

Add the chicken cubes to the marinade and mix well to coat.

Thread the marinated chicken onto the skewers, leaving a little space between each piece.

Fry the skewers in batches until they are golden brown and cooked through, about 5-7 minutes per batch.

Remove the skewers from the oil and place them on a paper towel-lined plate to drain excess oil.
